Watermelon Basil Salad Recipe

Fresh blueberries, cucumber, and feta cheese make this watermelon basil salad healthful. The simple lime dressing makes it the perfect summer side dish!  

Watermelon Salad: – 5 – 6 cups cubed watermelon, 1-inch cube – 1 ½ cups English cucumber, peeled and cut into quarter moon – 1 cup fresh blueberrie – ¼ cup fresh basil leaves, chopped – ⅓ – ½ cup crumbed feta cheese Lime Dressing: – 1 -2 tbsp extra-virgin olive oil – 3 tbsp fresh lime juice, about 1 – 2 lime – 1 tbsp honey, for optional sweetne – ½ tsp salt – ½ tsp black pepper


To a large salad bowl, add the watermelon, cucumber, blueberries, basil, and feta.

Mix the olive oil, honey, lime juice, salt, and pepper in a small bowl.

Drizzle the watermelon salad with the dressing and toss to mix. I suggest seasoning to taste and then adjusting to your own taste.

Upon serving, sprinkle some additional crumbled feta cheese on top, and then dig in!
