Fresh herb-infused, crispy sweet potato falafels are easy to make. Cook canned or dried chickpeas in the air fryer or oven. Simple, gluten-free, healthful recipe!
INGREDIENTS
– 1 large sweet potato– 14 oz can chickpeas, drained (or 1 heaping cup dried chickpeas soaked in water overnight)– ¾ cup parsley, roughly chopped– ¾ cup cilantro, roughly chopped– 2 large garlic clove– 1 tsp cumin– ½ tsp black pepper– 2 tbsp flour, chickpea, gluten-free all-purpose flour, or all-purpose flour– ¼ tsp baking soda– Salt, to taste– Olive oil or avocado oil spray, for extra crispine
INSTRUCTIONS
Preheat oven to 425°F and lightly oil baking sheet. Step 10 covers air fryers. Use canned or dry chickpeas. Soak dry chickpeas overnight.
Step 1
Soaking dry chickpeas enhances texture, but canned is faster. Chickpeas soften interiors. A medium dish of water soaks dried chickpeas. Let them soak 12–24 hours at room temp.
Step 2
Microwave Sweet Potato: Fork-pierce often. Microwave for 3-5 minutes until fork-tender. Scoop out the sweet potato's insides and discard the peel after 5 minutes of chilling.
Step 3
Make Dough: Puree sweet potato, chickpeas, parsley, cilantro, garlic, cumin, black pepper, baking soda, and salt. The grainy mixture should hold together after 2-3 pulses.
Step 4
Stir flour into mixture with spatula without overworking. Falafels: Make 15 balls with a meatball scooper or hands. Baking sheet. Step 10 covers air-frying.
Step 5
Pre-heat oven to brown and crisp falafel bottoms 20–25 minutes. Flip halfway through baking to brown both sides. Soften and crisp falafel.
Step 6
Preheat 400°F for air fry. Spray the basket with avocado or olive oil and air fried uncooked falafels for 10-15 minutes till crispy.
Step 7
Falafel with hummus, tzatziki, gyros, salad, rice, or alone for appetisers. Enjoy!
