– 3 yukon gold or russet potatoes,, grated– ½ yellow onion,, grated– ½ cup all-purpose flour– 2 green onions,, chopped– 2 cloves garlic,, minced– 1 jalapeno,, minced (optional)– 1 teaspoon salt– ¼ teaspoon black pepper– ¼ teaspoon baking powder– Light oil, such as canola or vegetable for frying

Mix everything well in a large bowl. Heat 1 tablespoon of oil in a large skillet or frying pan on medium-high.

Step 1
Make a loose patty from a handful of potato mixture when hot. The mixture will be very wet and soft.

Step 2
Tip the patty into the hot pan. Once the bottom is golden brown, flip and fry the other side.

Repeat with remaining potato mixture, adding oil as needed, until batter is gone. Drain patties on paper towels.
