This Twix Cheesecake is perfect for Twix fans! A delicious combination of shortbread crust, creamy cheesecake, and Twix bars. It has silky caramel and extra Twix pieces.
– 190 g all-purpose flour– 90 g powdered sugar– ¼ tsp salt– 180 g butter – 800 g cream cheese full fat, – 260 g granulated sugar– 200 g sour cream 18%– 1 1/2 tbsp cornstarch– 2 1/2 tsp vanilla extract– 4 large eggs – 300 g Twix – 70 g granulated sugar– 50 g corn syrup – 200 g heavy cream– 40 g butter – Pinch of salt– 2 packs Twix

Set the regular oven to 180ºC for preheating. Line a 23 cm/ 9 inch spring cake pan with parchment. Mix flour, powdered sugar, and salt in a bowl.

Add the shortbread dough and press it down with your fingers or a rubber spatula to form a uniform layer. Fork the shortbread dough all over.

Reduce oven temperature to 160ºC/325ºF for typical use. Cream cream cheese for 1 minute on low speed using a hand mixer or stand mixer paddle attachment.

Mix sour cream and cornflour in a small bowl until smooth. Add it to cream cheese with vanilla extract and stir on low speed until mixed.

After mixing in all the eggs, scrape down the bowl and mix again to make sure everything is combined. Mix chopped Twix bars into cheesecake batter.

Carefully mix Twix into the batter with a rubber spatula. Fill the spring pan with cheesecake batter. Heat water in a kettle.

Add boiling water to a large metal tin at least 5 cm tall and place the aluminum-covered cheesecake in the water bath.
