Pre-heat your oven to 350°F / 180°C and grease two 8-inch cake pans. Sift flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl. Mix everything.

Combine wet and dry ingredients and whisk until lump-free Mix hot water and espresso powder in a small bowl or glass until dissolved. Add to cake batter and mix.

The batter should be split evenly between the two cake pans. Bake for 35 minutes, or until a skewer inserted in the middle comes out clean.

Cool the cakes completely before removing them from the pans. Use a serrated knife or cake leveller to flatten the cakes' tops. If you want a thinner cake layer, cut the layers thinner.

Place a cake ring on a cake board or serving plate and put a layer of cake in the bottom. Set aside until mousse is ready.
