Triple Chocolate Truffle Cheesecake Cookies Recipe

SO. I'll keep this brief today since I think you should drop everything and make these cookies.  If you haven't left for work yet, make the dough now so it can sit in the fridge and you can eat warm cookies tonight.  

Ingredient

– 6 tablespoons unsalted butter – 4 ounces bittersweet chocolate chopped, mine was 60% – 6 ounces dark chocolate chopped + extra for dipping later – 3 large eggs – 1/2 cup granulated sugar – 2 teaspoons vanilla extract – 2 tablespoons Kahlua optional – 2 ounces cream cheese softened – 3/4 cup all-purpose flour – 2 tablespoons dark chocolate/dutch process cocoa powder – 1/4 teaspoon baking powder – 1/4 teaspoon salt – 4-5 ounces milk chocolate chopped – An assortment of toasted nut

Melt butter, bittersweet chocolate, and dark chocolate in a microwave-safe bowl or cup. Stir until melted in 30-second intervals in microwave.

Allow to cool completely. Also works over a double grill. Mix flour, cocoa powder, salt, and baking powder in a small basin. Set aside.

Add sugar and eggs to your electric mixer and beat on high for 2 minutes until light and frothy. Beat in vanilla extract, Kahlua, cream cheese, and melted chocolate/butter for 1-2 minutes.

Combine everything by scraping the bowl sides. Stir the dry ingredients with a wide spatula until combined. Mix in chopped milk chocolate. Wrap in plastic and refrigerate for 45 minutes or overnight.

Preheat oven to 350°F. Put parchment paper or a silpat on an ungreased baking pan. Remove truffle cookie dough from freezer.

Grease your hands with canola oil (cooking spray works great, but water can also be used) and scoop out 2 teaspoons of dough, spacing them 2 inches apart.

Form a small round disc of dough with your lubricated or wet palm. Use remaining dough. If making cookies in batches, chill the dough between rounds. Bake 9-10 minutes. Cool on the baking pan for 5 minutes.

After cooling, dip in melted dark chocolate and top with chosen topping. Serve warm or cool and store in an airtight jar for four days.
