Traditional Pizzelle Recipe (Italian Waffle Cookies)

For Christmas, families love thin, crisp Traditional Pizzelle Recipe (Italian Waffle Cookies). Vanilla and anise-flavored, simple. Only a pizzelle maker is needed. Italian holiday cookies like these Abruzzo ones are great for afternoon coffee!

Ingredient

– 3 cups all‐purpose flour – 2 teaspoons baking powder – ¼ pound butter melted – ¾ cup sugar – 3 large eggs  – 1 large organic lemon  – 1 teaspoon vanilla extract  – 2 teaspoons anise extract  – 3 Tablespoons fresh orange juice – ¼ cup milk

Preheat a pizzelle iron. Whisk flour and baking powder in a medium bowl; set aside.

Beat eggs and sugar in a large bowl or electric mixer bowl with the paddle attachment until frothy and thickening, 2-3 minutes. Add lemon zest.

Add extracts and melted butter to egg mixture slowly on low speed and mix for 30 seconds. Slowly add milk and orange juice.

Add dry mixture slowly to wet and blend until combined. Your batter will be sticky like dough. Spray pizzelle iron lightly with baking spray.

Drop 1 tablespoon batter on hot pizzelle press. Press close and cook for 1 minute or until light indicate cookies are done (somewhat golden).

Lift pizzelle off press with a fork and cool on a cookie rack or plate (flatten them). If not flat, they will mold while hot).

Spray iron again and repeat until batter is gone. Sprinkle confectioner's sugar and enjoy!
