Strawberry Brownies combine brownies' rich, fudgy goodness with fresh strawberries' sweet, tangy flavour for a memorable dessert. Instead of freeze-dried strawberries or strawberry cake mix, use fresh strawberries!
INGREDIENT
Strawberry Puree– 16 oz. strawberries fresh of frozen (453 grams)Brownie Batter– 3/4 cup unsalted butter 170 gram– 1 cup chopped white chocolate 170 gram– 1 1/4 cups granulated sugar 250 gram– 1/3 cup plus 2 tbsp strawberry puree recipe above– 1 large egg– 2 large egg yolk– 2 1/4 cups all-purpose flour 287 gram– 1/4 tsp saltStrawberry Ganache– 2 tbsp strawberry puree recipe above– 1 tbsp heavy cream– 3/4 cup chopped white chocolate 127 gram
Strawberry Puree
Process chopped strawberries in food processor. A small saucepan over medium-high heat should boil the puree.
Step 1
INSTRUCTIONS
Simmer the puree, stirring occasionally, for 20 minutes or until 2/3 cup is reached on medium or medium-low heat. Thick, dark puree.
Step 2
Strawberry wateriness and heat determine cooking time. Wet frozen strawberries may take longer to reduce. Place aside after cooking.
Step 3
Brownie Batter
Preheat oven to 350ºF. Prepare an 8x8" pan with grease and parchment. Avoid glass cookware.
Step 4
Beat unsalted butter and white chocolate in a large bowl. Insert the bowl into the microwave or double boiler. Stir chocolate and butter every 15–30 seconds in the microwave to melt.
Step 5
Whisk chocolate and butter in a heat-proof bowl over simmering water in a double boiler. Add 1/3 cup plus 2 tablespoons strawberry puree to granulated sugar. Mix or whisk. Mix with hand or stand mixer whisk.
Step 6
Mix or whisk egg and yolks for 3 minutes on medium speed. Two drops pink food colouring optional. Since they fade after baking, colour the brownies pink with food colouring.
Step 7
Mix flour and salt slowly. Use a spatula to finish batter without overmixing. Pour batter into pan. A spatula smooths. Set brownie edges and top with 35 minutes of baking. Remove brownies from oven. Relax them.
Step 8
Strawberry-GanacheGanache: Mix strawberries and heavy cream in a small spouted cup or bowl. Heat mixture in microwave.
Step 9
Add chocolate. Heat chocolate with whisk. Microwave the bowl for 10 seconds to melt the chocolate completely. Too-hard ganache? Add 1/2 tbsp heavy cream.
Step 10
Apply ganache to cooled brownies. Decorate brownies with freeze-dried strawberry powder. Slice and serve brownies after 10 minutes of ganache setting.
