Strawberry Sheet Cake Recipe

All of your strawberry cravings will be satiated by this absolutely stunning Strawberry Sheet Cake! 


FOR THE CAKE: – 2 & 1/4 cups (270g) all-purpose flour – 2/3 cup (133g) granulated sugar – 1 tablespoon baking powder – 1/2 teaspoon salt – 2/3 cup buttermilk – 1/2 cup strawberry preserve – 1/2 cup (113g) unsalted butter, melted and slightly cooled – 3 large egg – 1 teaspoon vanilla extract – 2/3 cup (113g) chopped fresh strawberrie FOR THE FROSTING: – 8 ounces (226g) cream cheese, at room temperature – 1/2 cup (113g) unsalted butter, softened – 3 & 3/4 cups (454g) confectioners' sugar, sifted* – 1 cup (170g) chopped fresh strawberrie

MAKE THE CAKE: Preheat oven to 350°F. Prepare a 9"x 13"x 2" baking pan. Mix flour, sugar, baking powder, and salt. Create a centre well.

Whisk buttermilk, preserves, butter, eggs, and vanilla in another bowl. Add to the flour mixture well and stir. Mix in strawberries.

Put batter in pan. Bake 25–30 minutes until a pick inserted into the centre comes out clean. Cool the cake completely on a wire rack. 

Step 3

FOR FROSTING: Mix cream cheese and butter with an electric mixer on medium speed until smooth. Add confectioners' sugar slowly and mix. Mix in strawberries. 

Step 4

Top the cooled cake with frosting. Let chill for an hour before serving. Put leftovers in fridge.
