– 2 cups rolled oats– ⅔ cup unsweetened applesauce– 2 large eggs– 3 Tbsp avocado oil– 3 Tbsp pure maple syrup– 1 tsp pure vanilla extract– 1 tsp apple cider vinegar– 2 tsp baking powder– 1/4 tsp baking soda– 1 tsp sea salt– 1 ½ cups fresh strawberries chopped

Preheat oven to 350°F and line muffin pan with paper liners. Blend oats in a high-powered blender or food processor until floury.
