Strawberry Crunch Cake Recipe

This strawberry crunch cake is a hit with everyone. It has real strawberries, rich cream cheese frosting, and cookie bits on top. 

INGREDIENT

FOR THE CAKE: – 3 & 1/4 cups (390g) cake flour – 1 & 3/4 cups (350g) granulated sugar – 1/2 cup (46g) ground freeze-dried strawberrie – 1 & 1/4 teaspoons baking powder – 1/2 teaspoon salt – 1 cup (226g) unsalted butter, softened – 1 & 1/4 cups milk – 2 teaspoons vanilla extract – 4 large egg – 3/4 cup strawberry jam (stir well before using) FOR THE TOPPING: – 24 Golden Oreos (about 272g) – 1 & 1/2 cups (28g) freeze-dried strawberrie – 1/4 cup (56g) unsalted butter, melted FOR THE FROSTING: – 8 ounces (226g) cream cheese, at room temperature – 1/2 cup (113g) unsalted butter, softened – 1/2 teaspoon vanilla extract – 3 & 1/2 to 4 cups (385 to 440g) confectioners’ sugar, sifted

MAKE THE CAKE: Preheat oven to 350°F. Use parchment to line two 9-inch round cake pans. Grease or flour the paper. Mix flour, sugar, ground strawberries, baking powder, and salt.

Stir in the butter with a medium-low electric mixer. A sandy mixture will result. Mix milk and vanilla. Add to batter and mix on low for a minute. 

Step 2

Stir in one egg on low speed for a few seconds before increasing to medium. Only mix until combined (30 seconds). Repeat with remaining eggs. Add the jam and mix briefly. 

Step 3

Spread batter evenly in prepared pans. Tap pans on counter a few times to remove large air pockets. 

Step 4

Bake 40–45 minutes until the cake is golden brown and a pick inserted into the centre comes out clean. Let the cakes cool on a wire rack. 

Step 5

To prepare the topping, pulse the cookies and strawberries in a food processor until they form large crumbs. To avoid powdering the strawberries, I break the cookies into a few pieces as I put them in the food processor.  

Step 6

Mix the mixture in a bowl. Pour in melted butter and mix. Optional: drizzle butter over mixture in food processor bowl and pulse to mix. 

Step 7

Place the topping mixture in a single layer on a lined half sheet pan and dry for 15 minutes. 

Step 8

The frosting is made by beating cream cheese, butter, and vanilla with an electric mixer on medium speed until light and fluffy. Mix confectioners' sugar a cup at a time until the frosting is the right consistency and sweetness. 

Step 9

Frost one cooled cake layer on a serving plate. Place the second cake layer on top and finish frosting the sides and top. 

Step 10

Spread strawberry/cookie topping on the cake's top and about a third to halfway up the sides. You don't need to use all the topping.
