Spicy cucumber salad from Asia is light and healthy. This dish features crispy accordion cucumbers, green onion, soy sauce, red chilli flakes, garlic, and sesame oil.
The Salad:– 8 mini or Persian cucumber– 1 green onion, ends trimmed and finely sliced– Sesame seedsThe Dressing:– 1 ½ tbsp low-sodium soy sauce, tamari or coconut aminios (if gluten free)– 1 ½ tbsp rice vinegar or white wine vinegar– 1 tsp sesame oil– 1 tbsp honey or maple syrup– 2 large garlic cloves, minced– 1 tsp crushed or full red chili flake

Get the accordion cucumbers ready. Peel, pat dry, and trim the cucumber ends. Now, sandwich a cucumber between two chopsticks, one at a time.

Making thin diagonal slices on top, cut the cucumber at a 45° angle (the chopstick will keep you from cutting all the way through).

Flip the cucumber and chop 90°. Again, don't cut cucumbers crosswise or 45°—the spiral won't work! Cut spiralized cucumbers in half and add to a large mixing bowl.

Prepare the dressing. Mix the ingredients for the dressing in a small bowl. To suit your tastes, add or subtract seasonings as necessary.

Mix the salad. After pouring the dressing over the cucumbers, gently mix it to prevent breaking. Garnish with sesame seeds and green onions. Have fun!
