Spice Cake With Brown Butter Frosting Recipe

To put it simply, this Spice Cake with Brown Butter Frosting is absolutely irresistible because it features a wonderful combination of spices and a sweet and rich frosting. 


FOR THE CAKE: – 3 cups (360g) all-purpose flour – 2 teaspoons baking powder – 1 & 1/2 teaspoons ground cinnamon – 1/2 teaspoon salt – 1/2 teaspoon ground ginger – 1/4 teaspoon ground allspice – 1/4 teaspoon ground cardamom – 1/4 teaspoon ground nutmeg – 1 cup (226g) unsalted butter, softened – 1 cup (200g) granulated sugar – 3/4 cup (150g) firmly packed light brown sugar – 4 large egg – 1 & 1/2 teaspoons vanilla extract – 1 cup (240ml) milk FOR THE FROSTING: – 1/2 cup (113g) unsalted butter – 2 & 1/2 cups (275g) confectioners' sugar, sifted – 1/2 teaspoon vanilla extract – 2 to 3 tablespoons milk

MAKE THE CAKE: Preheat oven to 350°F. Prepare a 9"x 13"x 2" baking pan. Mix flour, baking powder, cinnamon, salt, ginger, allspice, cardamom, and nutmeg. Set aside.

Beat butter, sugar, and brown sugar until fluffy with a medium-speed electric mixer. After adding each egg, mix well. Mix in vanilla.

Lower mixer speed. Three portions of flour mixture and two portions of milk are added. Just combine. 

Step 3

Spread batter in prepared pan. Bake until a pick inserted into the centre comes out clean, 35–40 minutes. Cool the cake completely in the pan on a wire rack.

FOR FROSTING: Place butter in a medium skillet or saucepan. Butter should melt and foam over medium heat. 

Step 5

Cook butter until brown specks form at the bottom and it smells nutty. Mix the butter, including the browned bits, in a large bowl. Let butter cool for an hour. Some solidification will occur. 

Step 6

Beat butter for a minute with a medium-speed electric mixer. Add confectioners' sugar slowly and mix well. 

Step 7

Put vanilla and 2 tablespoons milk in. Mix well and smoothly. Add milk a little at a time and mix until the frosting is the right consistency. Cover the cooled cake with frosting.
