SKINNY MOCHA CHEESECAKE BARS RECIPE 

What brightens these bars?  First, 6 full-sheet graham crackers and 2.5 tablespoons of butter make a lighter cheesecake crust than most.  A package of cream cheese and Greek yoghurt replaces two or more.  Greek yoghurt contains protein and lightens these bars.

Ingredient

CRUST: 6 full-sheet chocolate Graham crackers 2.5 tablespoons melted butter CHEESECAKE: 1 8-ounce softened reduced-fat cream cheese package 1/3 cup sugar Melted and slightly cooled 1/4 cup semisweet chocolate chips 1-tsp instant coffee 2-tsp hot water 3/4 cup plain Greek yoghurt 1 large egg, room temperature 2 tablespoons all-purpose flour 1 teaspoon vanilla extract

Preheat oven to 350°F.

Wrap an 8x8 baking pan in foil, leaving an overhang for easy removal.

Process chocolate graham crackers into fine crumbs in a food processor. Mix the crumbs and melted butter in a small bowl until combined. 

Firmly press the mixture into the baking pan.

Bake 8 minutes at 350°F. Let cool after removing from oven.
