ROMANTIC CHOCOLATE AND STRAWBERRY CUPCAKES RECIPE

Anything romantic like chocolate and strawberries? I doubt! This chocolate and strawberry cupcake with a chocolate-dipped strawberry is the perfect combination of rich chocolate and fresh strawberry. I think cupcakes are the best way to express yourself!

Ingredient

For the Cupcake – 1 ½ cups All-purpose Flour – ⅔ cup Cocoa Powder – 1 ½ cups White Sugar  – 2 Egg – ½ cup Vegetable Oil – 1 teaspoon Vanilla Extract – ¾ cup Milk – ⅓ cup Hot Water – 2 teaspoon Baking Powder – ¼ teaspoon Baking Soda – ½ teaspoon Salt

For the Strawberry Italian Meringue Buttercream – 1 batch Italian Meringue Buttercream – 360 g Strawberries fresh or frozen – ¼ cup Sugar – ½ teaspoon lemon juice – 1 tablespoon Freeze Dried Strawberry Powder  For the Chocolate Dipped Strawberrie – 1 punnet Fresh Strawberrie – 2 cups Chopped Chocolate – ½ cup White Chocolate

Using cupcake liners, prepare a muffin pan and preheat the oven to 350 degrees Fahrenheit.

Bake Chocolate Cupcakes Sift dry ingredients into a large bowl. Mix in eggs, oil, milk, and vanilla for a few minutes until combined.

Add hot water and stir. Batter will be liquid. Insert batter into cupcake liners and bake for 18 minutes or until a skewer comes out clean.

Make chocolate-dipped strawberries Return strawberries to the fridge to chill after washing. Put parchment paper on a baking sheet. Melt ⅔ of the chocolate in 30 second increments in the microwave.

Chocolate that is properly tempered should set quickly. After setting, melt white chocolate in 30-second increments and draw thin lines on chocolate-dipped strawberries with a piping bag or teaspoon.

Make Strawberry Italian Meringue Buttercream. Strawberry reduction: Combine strawberries, sugar, and lemon juice in a saucepan over medium heat and boil. When strawberries start to break down, use a potato masher to finish.

Make Italian Meringue Buttercream as instructed. Add strawberry reduction to buttercream after cooling and whip until smooth. A teaspoon of freeze-dried strawberry powder adds strawberry flavour. This tastes great without it!
