Pre-heat your oven to 350°F / 180°C and line a baking sheet with parchment.

Butter and sugars should be mixed. They won't 'cream' like other recipes, but will behave like dough. My stand mixer has a paddle attachment, but you could also use a large bowl and wooden spoon or an electric mixer.

Smoothly mix egg and cream on medium speed. Scrape bowl sides.

Use a teaspoon to mix buttermilk, vanilla, and red food colouring in a small bowl. This helps the food colouring mix into the cookie dough without gel colour clumps.

Sift flour, cocoa powder, baking powder, and salt in a medium bowl. Stir briefly to distribute everything. Add the flour mixture to the cookie dough and mix on low speed until no lumps remain.

Scrape down the bowl again to ensure everything is well incorporated, then mix the white chocolate chips into the red velvet cookie dough evenly.

Scoop medium cookie dough balls onto the prepared cookie sheet with a cookie scoop or tablespoon. My scoop makes 3–4 tablespoon dough balls. Cookie spacing is important because they will spread in the oven.
