We're adding raspberry preserves and fresh raspberries for a pink treat like strawberry cake. They're an obvious Valentine's Day dessert recipe, but after one taste, you'll want to make them year-round!

Like cheesecake pie, swirls work best with full-fat brick cream cheese. Combine raspberry jam/preserves, sugar, egg, and flour. A lump-free batter is made with room-temperature ingredients. A few drops of pink or red gel food colouring brighten light pink cheesecake batter.

Making brownie batter is simple. Brownie batter requires melted butter and cocoa powder. This thickens quickly, making swirling difficult, so I make it after the cheesecake batter.

Swirl: Magic happens here. Once the batters are ready, reserve 1/2 cup of brownie batter. Use a 9-inch square or 11x7-inch baking pan to pour the remaining batter. Drop spoonfuls of cheesecake batter over brownie batter.

Raspberry toppings are optional. Raspberry reds are gorgeous. Controlling yourself while the brownies cool is the hardest part. Cut 3 hour-cooled raspberry cheesecake brownies. I promise they'll disappear quickly, so make more.
