PUMPKIN SPICE CUPCAKES RECIPE

These soft and fluffy pumpkin spice cupcakes are spiced with warm spices and topped with smooth cream cheese frosting.

– Butter – Sugar – Egg – All-purpose Flour – Pumpkin Puree – Spice – Vegetable Oil – Milk

Place cupcake liners in a muffin pan and preheat oven to 350°F / 180 °C. Beat butter and sugar until fluffy.

Stir in cinnamon, ginger, nutmeg, and salt. Sieve flour, baking powder, and baking soda into a bowl.

Fold half the flour into the batter slowly until combined. Add vegetable oil and milk and mix.

Scrape the bowl sides and fold in the remaining flour. Scoop about ¾ full into cupcake liners.

Bake 18–20 minutes until tops are springy and skewers come out clean. Cool completely before frosting.

Optional: Core out the middle before frosting and fill with Pumpkin Spice Curd for a special touch.
