Pumpkin Cookies Recipe

Pictures of my favourite pumpkin cookies that make me want to drool. They're healthy and easy to make, so they make great holiday treats! These cookies are pretty, taste good, and are easy to make. 


– 2 ½ cups whole wheat pastry flour – 1 teaspoon baking powder – 1 teaspoon baking soda – 2 teaspoons ground cinnamon – ¾ teaspoon ground nutmeg – ¾ teaspoon ground clove – ½ teaspoon salt – ½ cup butter, softened – 1 ½ cups raw (turbinado) sugar – 1 cup canned pumpkin puree – 1 egg – 1 teaspoon vanilla extract – Powdered sugar, for dusting

Heat oven to 350°F (175°C). Mix flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt in a medium bowl.

Step 1


Mix the butter and sugar in a different medium-sized bowl. Mix in the egg, pumpkin, and 1 teaspoon of vanilla. Keep beating until the mixture is smooth. 

Step 2

Stir in the dry ingredients just until they are all mixed in. To put one tablespoon of dough on a cookie sheet lined with parchment paper, use a cookie dough scoop or two spoons.

Step 3

Make each cookie a little flatter. Set the oven to 150 to 200 degrees. After the cookies are baked, put them on a rack to cool. Lightly dust them with powdered sugar.
