Pumpkin Butter Chocolate Chip Cookies Recipe

October Fridays have the greatest Pumpkin Butter Chocolate Chip Cookies. Pumpkin chocolate chip cookies with browned butter, pumpkin butter, pumpkin spice, and lots of chocolate. Each cookie dough ball is rolled in cinnamon sugar for a “snickerdoodle” finish before baking to perfection. Everything about these cookies is great. 

Ingredient

– 2 sticks (1 cup) salted butter, at room temperature – 3/4 cup dark brown sugar – 1/3 cup granulated sugar – 1/3 cup pumpkin butter, homemade or store-bought – 1 egg, at room temperature – 2 teaspoons vanilla extract – 2 1/4 cups all-purpose flour – 1/2 teaspoon baking soda – 1/2 teaspoon ground cinnamon or pumpkin pie spice – 1/2 teaspoon kosher salt – 1 1/2 cups semi-sweet chocolate chips – 4 ounces semi sweet or dark chocolate chunks – 1/3 cup cinnamon sugar

Cook 1 stick butter in a small saucepan over medium heat for 3–4 minutes until it browns. Off the heat and into a heatproof bowl. Put in the freezer for 10-15 minutes, no longer.

Preheat the oven to 350. Parchment a baking sheet. Mix the remaining 1 stick butter, cooled browned butter, brown sugar, and sugar in a large basin.

Add pumpkin butter, egg, and vanilla and beat until smooth. Add flour, baking soda, cinnamon, and salt. Chocolate chips and pieces should be folded in.

Dip the dough into 1 tablespoon balls, generously dip in cinnamon sugar, and arrange 3 inches apart on the baking sheet.

Bake 8 minutes in the oven. Flatten the baking sheet by tapping it twice on the counter after removing it from the oven.

Return the cookies to the oven for another 1-2 minutes until the borders are just starting to firm but the centre is still doughy. Tap the baking sheet on the counter 1-2 times after removing from the oven to flatten.

Leave cookies on baking sheet to cool. While on the baking pan, they will cook slightly. Eat warm (preferred) or chill and keep in an airtight jar for 4 days.
