PECAN PRALINE recipes

Our family believed that if the can of salted mixed nuts had no more pecans, I had opened it first. I usually like salty over sweet.

Ingredient

– 2 cups pecan halve – 1 1/4 cups white sugar – 3/4 cup brown sugar, packed – 1/2 teaspoon baking soda – Pinch kosher salt, optional (omit if using salted butter) – 3/4 cup light cream – 2 tablespoons unsalted butter – 1 teaspoon brandy or vanilla, optional

The nuts taste richer and nuttier after this optional step. Preheat oven to 300°F. Toast pecan halves in a single layer on a baking sheet for 10 minutes, flipping once. Let chill.

In a separate bowl, prepare two baking sheets by lining them with parchment paper or Silpat.

In a 3-quart saucepan, mix white and brown sugar, baking soda, and pinch salt (if using unsalted butter). Add light cream and heat medium-high. Attach a candy thermometer to the pan.

When the temperature reaches 235°F, add the butter and stir for 1 minute to melt and incorporate.

If using, whisk in brandy or vanilla and pecans off the heat until coated. Stir and cool for 30 seconds.

Allow it cool for 45 minutes until the pralines easily remove from the pan.Three to five days in an airtight container.
