Paleo Apple Pie Bars (Vegan) Recipe

A grain-free, dairy-free paleo vegan apple pie bar recipe with toasty spices! Delicious and easier to make than an apple pie!

Apple Filling: – 3 ½ cups apples peeled and sliced thinly (2 apples) – 3 Tbsp pure maple syrup – 1/2 cup water – 1 tsp ground cinnamon – Pinch sea salt – 2 tsp tapioca flour Shortbread Crust and Topping: – 2 ½ cups finely ground almond flour* – 6 Tbsp coconut oil melted** – 3 Tbsp pure maple syrup – Pinch sea salt

Mix all apple filling ingredients except tapioca flour in a small pot. Cook mixture covered over medium-high heat.

Stir occasionally and simmer at a medium boil until apples have leached off much juice.

Cook and whisk in the tapioca flour for 15–20 minutes until thick. Stop cooking and refrigerate till use.

While apple filling cooks, prepare other ingredients. Pre-heat the oven to 350°F and line an 8" x 8" cake pan with parchment.

Mix all items in a bowl. Stir until a thick, wet, crumbly dough forms. Take ½ cup of the crust mixture and place it in a bowl for topping.

Apply the remaining crust mixture evenly to the parchment-lined cake pan. Multiple fork pokes ensure even baking.

Bake 12–16 minutes on the center rack of the preheated oven until the crust is golden-brown and firm. Remove the crust from the oven.

Evenly cover the crust with apple filling. Top the apple layer with the reserved topping.

Bake the bars until the crumb topping is golden-brown, 20–25 minutes. Let crumb bars cool for 30 minutes before slicing and serving.
