Overnight Breakfast Casserole has bacon, cheese, spinach, and caramelized onions in an egg strata. This hearty breakfast is wonderful for Christmas!
INGREDIENT
– 12 oz. bacon (about 10 slices)– 1 medium yellow onion, chopped– 2 cloves garlic, minced– 5 cups fresh spinach– 8 egg– 2 cups half and half– 1/2 teaspoon salt– 1/2 teaspoon black pepper– 1 Tablespoon chopped chive– 8 cups bread cubes (I prefer day old sourdough or crusty French bread)– 1 cup shredded Swiss cheese– 1 cup shredded cheddar cheese

INSTRUCTION
A large skillet with crisp bacon. Line a platter with paper towels to cool strips. Remove all skillet bacon fat except 1 tablespoon. Sauté onion for 6-7 minutes till transparent.

Step 1
Sauté garlic and spinach another minute until wilted. Mix eggs, half-and-half, salt, pepper, and chives. In a greased 9 x 13 inch baking dish, stack bread cubes, half the cheeses, spinach and onion mixture, and bacon.

Step 2
Put egg custard on top evenly. Add remaining cheese. Chill overnight or 6 hours under saran. Let the dish set at room temperature for 20 minutes while the oven heats to 350.

Step 3
Without saran, bake 35-40 minutes until cheese melts and edges brown. Serve now.
