– 3/4 cups cake flour all purpose flour can be used as a substitute – 2 ¼ teaspoons baking powder – ¾ teaspoon salt – 1/2 cup unsalted butter room temperature – 1 cup granulated sugar – 3 large eggs room temperature – 2¼ teaspoon vanilla extract – ⅓ cup whole milk room temperature – ⅓ cup sour cream room temperature – 3 tablespoons cocoa powder preferably Dutch processed – ¼ cup hot water – 2 tablespoons freeze dried strawberry powder – 3 tablespoons strawberry jam* optional, but recommended for trawberry flavor, see recipe note – red gel food coloring use a little to get the color you like – Strawberry Icing – 1 cup powdered sugar – 2 tablespoons milk – ¾ tablespoon freeze dried strawberry powder
Heat oven to 350 F. Butter a 9 by 5-inch loaf pan, line it with parchment paper, and butter the parchment paper. Leave excess paper hanging over the sides. Set aside.
Mix the cocoa powder in a medium basin. Mix in the boiling water with a spoon or spatula. Set aside. Beat the butter and sugar for 4-5 minutes in a large basin with a hand mixer or electric mixer with the paddle attachment until light and fluffy.
Mix the eggs one at a time until mixed, then add the vanilla. Scrape bowl sides and bottom. Stir in the dry ingredients alternately with the sour cream and milk with a spatula. Stir just to mix. Avoid overmixing.
Spread strawberry batter in the loaf pan. Add 3–4 teaspoons of strawberry jam to strawberry batter for added taste. Strawberry jam is optional.
Spread chocolate batter on top. Vanilla batter over chocolate batter. Spread batter with a spatula, big spoon, or offset spatula.
To marble the cake, swirl it side to side and top to bottom using a butter knife or skewer. Turn the pan and swirl the knife through the batter again.
The cake was delicately marbled. Swirl more for marbled effect. Smooth cake top with spatula or offset spatula before baking.
