Healthy One Pot Chicken Florentine Gnocchi Recipe 

Tender chicken, soft gnocchi, and a creamy, cheesy sauce make my One Pot Chicken Florentine Gnocchi delicious in just 30 minutes.  

– 2 tablespoons olive oil  – 1 pound chicken breasts  – ½ teaspoon salt – ½ teaspoon black pepper – ¼ cup shallot – 2 cloves garlic  – ¼ cup sun dried tomatoe – 1 cup half and half cream – 2 cups chicken broth  – 2 pounds gnocchi – 2 cups fresh spinach  – 2 cups mozzarella cheese – ½ cup parmesan cheese

A large skillet should be used to bring the olive oil to a temperature of medium-high.

After adding the chicken and seasoning it with salt and pepper, sauté it for two to three minutes, or until it begins to brown.

Add the sun-dried tomatoes, garlic, and shallots. Cook, stirring, for one to two minutes.

Stir in the half-and-half cream and chicken broth. After bringing to a simmer, add the raw gnocchi and stir.

The gnocchi should absorb and thicken the sauce and be cooked in 4–5 minutes.

Fold spinach into mixture until wilted. Check seasoning and add salt and pepper. Stir in cheeses; they should melt quickly.
