Healthy Greek Cucumber Tomato Salad Recipe

This light Greek Cucumber Tomato Salad has cucumbers, garbanzo beans, and crumbled feta in a lemony red wine vinaigrette.  

INGREDIENTS

FOR THE DRESSING: – 1/4 cup red wine vinegar – 2 teaspoons freshly squeezed lemon juice – 2 teaspoons honey – 1 clove garlic, minced – 1 1/2 teaspoons dried oregano – 1/3 cup extra-virgin olive oil FOR THE SALAD: – 3 medium cucumbers, cut into 1/2-inch piece – 5 cups halved cherry tomatoe – 1/2 cup sliced red onion – 1/3 cup sliced black olives  – 1 (15-oz.) can chickpeas, rinsed and drained – 1 cup crumbled feta cheese

INSTRUCTIONS

MAKE THE DRESSING:- Mix the honey, garlic, oregano, and red vine vinegar in a small bowl with a whisk.   

Step 1

As you whisk, gradually add the olive oil until the mixture becomes emulsified.   

Step 2

After giving the dressing a taste and seasoning it with salt and pepper, make sure to set it aside.  

Step 3

MAKE THE SALAD:- Put the chickpeas, cucumbers, tomatoes, red onions, and black olives in a big bowl.   

Step 4

Add the sauce and mix everything together. Add the feta cheese and mix it in. Then serve.
