This light Greek Cucumber Tomato Salad has cucumbers, garbanzo beans, and crumbled feta in a lemony red wine vinaigrette.
INGREDIENTS
FOR THE DRESSING:– 1/4 cup red wine vinegar– 2 teaspoons freshly squeezed lemon juice– 2 teaspoons honey– 1 clove garlic, minced– 1 1/2 teaspoons dried oregano– 1/3 cup extra-virgin olive oilFOR THE SALAD:– 3 medium cucumbers, cut into 1/2-inch piece– 5 cups halved cherry tomatoe– 1/2 cup sliced red onion– 1/3 cup sliced black olives – 1 (15-oz.) can chickpeas, rinsed and drained– 1 cup crumbled feta cheese
INSTRUCTIONS
MAKE THE DRESSING:- Mix the honey, garlic, oregano, and red vine vinegar in a small bowl with a whisk.
Step 1
As you whisk, gradually add the olive oil until the mixture becomes emulsified.
Step 2
After giving the dressing a taste and seasoning it with salt and pepper, make sure to set it aside.
Step 3
MAKE THE SALAD:- Put the chickpeas, cucumbers, tomatoes, red onions, and black olives in a big bowl.
Step 4
Add the sauce and mix everything together. Add the feta cheese and mix it in. Then serve.
