INGREDIENTS
– ½ cup mayonnaise (110g)– 2 tablespoons lime juice– 2 teaspoons curry powder– ½ teaspoon salt (4g), plus more to taste– ¼ teaspoon ground black pepper– 3 cups cooked chicken chopped or shredded (405g)– ½ cup diced celery (62g)– ½ cup raisins 92g– ¼ cup chopped scallions 15g– ½ cup roasted cashews chopped (72g)
INSTRUCTIONS
Add the curry powder, salt, and pepper to a big bowl and mix them together.
Step 1
Put in the onions, raisins, chicken, and celery. Mix everything together until it's well covered.
Step 2
Put the dish in the fridge with the lid on until you're ready to serve.
Step 3
Just before serving, add the cashews and more salt, if you like.
