Healthy Curried Chicken Salad Recipe

Enjoy my Curried Chicken Salad with tender chicken, creamy mayonnaise, aromatic curry powder, sweet raisins, and crunchy cashews. Ideal for quick, diverse meals!  


– ½ cup mayonnaise (110g) – 2 tablespoons lime juice – 2 teaspoons curry powder – ½ teaspoon salt (4g), plus more to taste – ¼ teaspoon ground black pepper – 3 cups cooked chicken chopped or shredded (405g) – ½ cup diced celery (62g) – ½ cup raisins 92g – ¼ cup chopped scallions 15g – ½ cup roasted cashews chopped (72g)


Add the curry powder, salt, and pepper to a big bowl and mix them together.   

Step 1

Put in the onions, raisins, chicken, and celery. Mix everything together until it's well covered.  

Step 2

Put the dish in the fridge with the lid on until you're ready to serve.  

Step 3

Just before serving, add the cashews and more salt, if you like.
