Healthy Alfredo Sauce Recipe

Healthy Alfredo sauce is silky and tasty without butter or heavy cream. Low-fat cream cheese, parmesan, and skim milk make it easy for weekday meals in under 20 minutes!  

INGREDIENTS

– 1 tbsp olive oil or avocado oil – 1 large clove garlic, minced – 2 tbsp cornstarch, you can also use arrowroot starch or tapioca flour – 1 ¼ cups skim milk, or unsweetened almond milk – 4 oz (½ cup) low-fat cream cheese, also called Neufchatel cream cheese – ½ tsp salt, more to taste – ¼ tsp black pepper – ½ cup grated parmesan cheese – 12 oz favorite pasta noodles, fettuccine, spaghetti, ribbon are the best

INSTRUCTIONS

Bring a pot of water with salt to a boil, and then follow the directions on the package to cook your favourite pasta noodles.  

Step 1

Put olive oil and minced garlic in a big skillet set over medium-low heat. For 30 seconds to a minute, until the garlic smells good and just starts to turn brown.  

Step 2

Add the milk slowly and put the cornflour on top. Mix the cornflour and milk with a light whisk, and keep stirring until the mixture gets thick.  

Step 3

Add the cream cheese and mix it in until it "melts." Once the Parmesan cheese is fully melted, add the salt and black pepper and mix it in.  

Step 4

When the noodles are done, add them to the smooth sauce and mix them well. Add some fresh parsley on top and enjoy!
