– 4 tablespoons salted butter, at room temperature – 1/2 cup creamy peanut butter – 1/4 cup real maple syrup – 2 teaspoons vanilla extract – 1 cup whole wheat pastry flour – 1/4 teaspoon baking powder – 3.2 ounces dark chocolate, melted – Flaky sea salt (optional) FILING – 1/2 cup creamy peanut butter – 3 tablespoons salted butter, at room temperature – 2-3 tablespoons real maple syrup

Pre-heat the oven to 350. Parchment two baking sheets. Mix butter, peanut butter, maple syrup, and vanilla in a large bowl until smooth.

Beat in the flour and baking powder until the dough forms a ball. Add 2-3 tablespoons water to crumbly dough. If dough is wet, add 1-2 teaspoons flour.

Make tablespoon-sized dough balls. Press the two balls together and lay them on the baking sheet after halving each ball. Flatten cookies gently. Make crosshatches with a fork.

Transfer to oven and bake 9-10 minutes. Peanut butter, butter, and maple syrup should be mixed to make the filling.

Apply an equal layer to one cookie and sandwich another. Cookies can be frozen for 10 minutes to make dipping easier.
