Greek Chicken Bowls Recipe

Our favorite weeknight dinner: Greek Chicken Bowls. Rice with homemade quick tzatziki sauce and marinated chicken!


For the tzatziki: – 1 cup plain Greek yogurt – 1 cup seedless cucumber small diced – 1 tablespoon fresh squeezed lemon juice – 2 garlic cloves minced – 1 tablespoon white vinegar or apple cider vinegar – 2 tablespoons fresh dill chopped – Salt and pepper to taste For the bowls: – 4 garlic cloves minced – 1/4 cup lemon juice – 1 tablespoon extra virgin olive oil – 1/2 cup plain Greek yogurt – 1 teaspoon fresh or dried dill – 1 teaspoon dried thyme – 1 teaspoon salt – 1/2 teaspoon black pepper – 1 lb boneless skinless chicken breasts, cut into 1-inch pieces – Easy tzatziki sauce for serving – Diced red onion for serving – Pita bread for serving – Lemon wedges for serving – cooked white rice for serving


First, make the tzatziki sauce. To make the salad, put diced cucumber, lemon juice, minced garlic, vinegar, and dill in a medium-sized bowl.

Step 1

Carefully stir until everything is well mixed. Add salt and pepper to taste. Put in the fridge until ready to serve. Crush the garlic and put it in a large bowl.

Step 2

Add the lemon juice, extra virgin olive oil, plain Greek yogurt, dill, thyme, salt, and pepper. Mix everything together. Cover the chicken well after adding it.

Step 3

For at least 30 minutes, let the chicken sit in the sauce. Warm up a nonstick pan over medium-high heat. It's time to add the olive oil.

Step 4

Before putting the chicken in the pan, take off most of the marinade. If you don't, it will burn. Spread out the chicken pieces in the pan so they cook evenly.

Step 5

Leave some space between them so they don't steam. If your skillet isn't very big, you might have to work in batches.

Step 6

Cook the chicken for three to four minutes, then flip it over and cook for another three to four minutes, or until the chicken reaches 165°F on the inside.

Step 7

Put the chicken on a plate to rest. Add some easy tzatziki sauce, diced red onion, pita bread, and a lemon wedge to white rice and serve chicken on top of it.
