For the tzatziki: – 1 cup plain Greek yogurt – 1 cup seedless cucumber small diced – 1 tablespoon fresh squeezed lemon juice – 2 garlic cloves minced – 1 tablespoon white vinegar or apple cider vinegar – 2 tablespoons fresh dill chopped – Salt and pepper to taste For the bowls: – 4 garlic cloves minced – 1/4 cup lemon juice – 1 tablespoon extra virgin olive oil – 1/2 cup plain Greek yogurt – 1 teaspoon fresh or dried dill – 1 teaspoon dried thyme – 1 teaspoon salt – 1/2 teaspoon black pepper – 1 lb boneless skinless chicken breasts, cut into 1-inch pieces – Easy tzatziki sauce for serving – Diced red onion for serving – Pita bread for serving – Lemon wedges for serving – cooked white rice for serving
