– 1 ½ cups all-purpose flour– 1 teaspoon baking powder– ¼ teaspoon baking soda– ¼ teaspoon salt– ½ teaspoon ground dried ginger– 1 teaspoon ground cinnamon– 1 egg– ½ teaspoon vanilla extract– ¼ cup molasse– 1 ½ cups water

A bowl of flour, baking powder, baking soda, salt, ginger, and cinnamon should be placed aside. Mix the egg, vanilla, and molasses in a separate dish until smooth.

Whisk water until fully incorporated. Stir the flour and molasses mixture until just incorporated; lumps are good.

Heat a lightly greased griddle on medium-high. Drop batter by large spoonfuls onto the griddle

and heat until bubbles form and edges dry. Flip and brown the other side. Use leftover batter.
