Gingerbread Pancakes Recipe 

One morning, my brother and I arrived ravenous while Grammie made gingerbread! She grilled the amended recipe and made it excellent.

– 1 ½ cups all-purpose flour – 1 teaspoon baking powder – ¼ teaspoon baking soda – ¼ teaspoon salt – ½ teaspoon ground dried ginger – 1 teaspoon ground cinnamon – 1 egg – ½ teaspoon vanilla extract – ¼ cup molasse – 1 ½ cups water

A bowl of flour, baking powder, baking soda, salt, ginger, and cinnamon should be placed aside. Mix the egg, vanilla, and molasses in a separate dish until smooth.

Whisk water until fully incorporated. Stir the flour and molasses mixture until just incorporated; lumps are good.

Heat a lightly greased griddle on medium-high. Drop batter by large spoonfuls onto the griddle

 and heat until bubbles form and edges dry. Flip and brown the other side. Use leftover batter.
