Everyday Butter Cake Recipe

This easy and quick vanilla cake recipe makes a fluffy snack cake that's good for any day and any time. It tastes like a cross between a tea cake and a butter cake.  

– 226g or 1 cup unsalted butter cold is fine – 205g or 1 cup granulated sugar – 1 tsp fine sea salt – 1 tablespoon pure vanilla extract – 3 large eggs at room temperature (place them in a bowl of warm water before you begin melting the butter) – 180g or ¾ cup sour cream – 250g or 2 cups cake flour sifted – ¼ cup powdered sugar (can sub with granulated sugar) – 2 teaspoons baking powder




The oven should be preheated to 350 degrees Fahrenheit. Prepare a square or round cake pan measuring 9 inches by greasing and flouring it.

STEP  1 .

Put the butter in a large bowl made of glass or another heat-resistant material, and microwave it until it is almost completely melted but not completely.

Whisk the sugar for a full thirty seconds after adding it to the mixture. Continue whisking for another thirty seconds after adding the salt and vanilla.

Start by adding the eggs one at a time, whisking each one thoroughly before adding the next one. After that, continue whisking for a full minute, until the mixture is fluffy and creamy.

Add the cake flour, powdered sugar, and baking powder, and sift them together. Mix in the sour cream using a whisk. Until the batter is completely smooth,

fold it. Pour into the pan that has been used. An additional three tablespoons of granulated sugar should be sprinkled on top here .

To ensure that a cake tester comes out clean and the top is golden brown, bake the cake for thirty to forty-five minutes.
