This easy and quick vanilla cake recipe makes a fluffy snack cake that's good for any day and any time. It tastes like a cross between a tea cake and a butter cake.
– 226g or 1 cup unsalted butter cold is fine– 205g or 1 cup granulated sugar– 1 tsp fine sea salt– 1 tablespoon pure vanilla extract– 3 large eggs at room temperature (place them in a bowl of warm water before you begin melting the butter)– 180g or ¾ cup sour cream– 250g or 2 cups cake flour sifted– ¼ cup powdered sugar (can sub with granulated sugar)– 2 teaspoons baking powder

The oven should be preheated to 350 degrees Fahrenheit. Prepare a square or round cake pan measuring 9 inches by greasing and flouring it.

Put the butter in a large bowl made of glass or another heat-resistant material, and microwave it until it is almost completely melted but not completely.

Whisk the sugar for a full thirty seconds after adding it to the mixture. Continue whisking for another thirty seconds after adding the salt and vanilla.
