– 1 ½ cup all-purpose flour– ¼ cup cocoa powder– 1 tsp baking powder– ½ teaspoon baking soda– ½ teaspoon salt– ½ cup vegan butter – ½ cup brown sugar – ½ cup granulated white sugar – 3 Tablespoons non-dairy milk – 3 Tablespoons chocolate chip– 1 cup mini marshmallow

Preheat oven to 350°F. Parchment two large baking sheets. Mix flour, cocoa powder, baking powder, baking soda, and salt in a small bowl.

Beat sugars and margarine until smooth in a mixing bowl with the paddle attachment or with a hand mixer. Add non-dairy milk and mix for two minutes.

Mix three portions of flour into the batter on low speed. Stop the mixer and spatula-scrape the bowl after each flour addition. Stir in half the marshmallows and chocolate chips on low speed or by hand with a wooden spoon.

Refrigerate dough for 20 minutes. Place 1.5 tablespoon balls of cookie dough on parchment-lined baking sheets, two inches apart, to bake.

Hand Tuck the remaining marshmallows into the cookie dough on top. Bake until edges firm up, 10-15 minutes. The cookies will appear soft. Cooking continues as they cool. Cool 5 minutes before removing from pan.

Warm cookies are great. They can be reheated in the microwave for 10 seconds after cooling.
As cookies cool, their edges crisp up.
