Tasty Peppermint Marshmallows Recipe 

Handmade peppermint marshmallows with the perfect amount of peppermint flavour and a festive red swirl are the greatest way to liven up your favourite hot chocolate this winter.  


– ¾ cup water divided – 3 envelopes unflavored gelatin .25 ounces each – ⅔ cup light corn syrup – 2 cups white sugar – 1 tablespoon pure vanilla extract – ½ teaspoon peppermint extract – ½ cup finely crushed candy canes optional – Red gel food coloring optional – ¼ cup cornstarch – ¼ cup confectioners’ sugar


For a 9x9 baking dish, use plastic wrap and non-stick cooking spray. Spray and reserve another plastic wrap for the top.  

Step 1

Sprinkle gelatin over 1/2 cup of water in a stand mixer bowl with the whisk attachment to soak.  

Step 2

While gelatin soaks, mix 1/4 cup water, corn syrup and sugar in a saucepan. Mixture should boil over medium heat. Hard-boil the mixture for 1 minute.  

Step 3

Carefully pour the hot sugar mixture into the gelatin mixture and beat on high for 12 minutes with the stand mixer until frothy and stiff. A  

Step 4

Beat in vanilla and peppermint extract until barely blended. If using, mix crushed candy canes. Pour marshmallow mixture into baking dish and level top with oiled spatula.   

Step 5

Squeeze 9-12 drops of food colouring onto the marshmallow, then swirl it in with an oiled butter knife or chopstick. Put the prepared plastic wrap on top of the candy and lightly press it down.  

Step 6

Rest marshmallow candy for 4 hours or overnight. Stir cornflour and confectioners' sugar in a small bowl.   

Step 7

Use oiled scissors or a kitchen knife to cut marshmallow candy into strips and 1" squares. Dredge marshmallows lightly in cornflour and store in an airtight container.
