Delicious Strawberry Cupcakes Recipe

Strawberry Cupcakes use a simple cake mix and three strawberry kinds! They make a lovely strawberry cupcake with a simple, creamy strawberry buttercream!  


For the cake: – 1 box white cake mix (no pudding added) – 1 3 oz. package strawberry jello – 1 scant Tablespoon flour – Pinch baking powder – 1 Tablespoon granulated sugar – 3/4 cup vegetable oil – 4 egg – ½ cup pureed strawberrie – ½ cup diced fresh strawberrie For the frosting: – 1 oz. package freeze dried strawberrie – 2 sticks (16 Tablespoons) unsalted butter, at room temperature – 4 cups powdered sugar – 1 Tablespoon vanilla extract – Pinch salt – 2-4 Tablespoons heavy cream or half and half


For the cupcakes:-Pre-heat the oven to 350. Put cups in two 12-cup muffin pans. Mix cake mix, jelly, flour, baking powder, and sugar in an electric mixer.

Step 1

Beat in vegetable oil on medium. After adding each egg, beat and scrape basin. Add strawberries and beat again, scraping basin, until batter is well combined.  

Step 2

Pour batter into prepared cupcake liners, filling about ⅔ full. Bake 20–23 minutes until a toothpick inserted in the centre comes out clean. After a few minutes, cool the cupcakes on a wire rack.  

Step 3

For the frosting:- Blend the entire strawberry box. Mix into powder. Let the powder rest for a minute before removing the top.  

Step 4

Electrically beat butter till light and foamy. Mix with strawberry powder. Add powdered sugar a cup at a time, beating and scraping the bowl.  

Step 5

Mix vanilla and 2 tablespoons heavy cream. Inspect thickness. Add more cream if needed.  

Step 6

Place buttercream in a Wilton 2-tip piping bag. Pipe frosting on cooled cupcakes.   

Step 7

This recipe coats 24 cupcakes lightly with frosting. Increase the recipe by 1.5 for towering frosting swirls.
