Delicious Chop Suey Recipe 

Chop Suey, a Chinese-American classic, is a filling dish with juicy chicken and colourful vegetables in a thick sauce, great for a midweek dinner.  

– ½ pound chicken breast – 1 egg white – 1 tablespoon cornstarch – 1 tablespoon soy sauce – 2 tablespoons vegetable oil – 2 cloves garlic – 1 medium onion  – 1 medium bell pepper – 2 cups mixed vegetables  – ¼ cup soy sauce – 2 tablespoons oyster sauce – 1 teaspoon sugar – salt and pepper – 1 cup chicken broth  – 2 tablespoons cornstarch

Ingredient

Combine one egg white, one tablespoon cornflour, and one tablespoon soy sauce in a medium-sized bowl and whisk until well combined.

Gently add the thinly sliced chicken breast to the bowl, making sure to coat each piece. Let it marinade for half an hour in the fridge.

In a skillet or wok, warm up one tablespoon of vegetable oil over medium heat.

Cook the marinated chicken for two to three minutes, or until it becomes opaque. Take off the heat and place aside.

Heat one more tablespoon of vegetable oil in the same skillet or wok over medium-high heat.

Add the onion and garlic, and stir-fry for two minutes, or until the onion turns translucent.

Add the mixed vegetables and bell pepper. Stir-fry for a further three to four minutes.

Add the cooked chicken back to the skillet and thoroughly combine. Add 2 tablespoons of oyster sauce and ¼ cup of soy sauce.

Add a tsp of sugar and toss to taste with salt and pepper. Mix everything together. After adding the chicken broth, boil the mixture.

Add the cornstarch-water combination slowly, stirring constantly, until the sauce thickens, about 2 minutes. Remove from heat and add rice.
