There is no dairy in this curried broccoli cauliflower soup made with coconut milk. Made with veggies and spices for a one-pot meal that tastes great! It is gluten-free and vegan.
Ingredient
– Cauliflower– Broccoli– Carrot– Arrowroot starch– Coconut milk– Nutritional yeast– Vegetable broth– Curry powder, red pepper flake– cumin, and coriander– Lime juice
Direction
Put diced onions and carrots in a Dutch oven with warm olive oil. Cook and stir until soft.

Add the arrowroot, chopped garlic, and spices one at a time, stirring after each addition.

Place the broccoli pieces, veggie stock, and coconut milk in the pot.

Maintain a low simmer with the lid on until the vegetables reach the desired tenderness. Stir in the lime juice after adding it.

When the veggies have reached the desired tenderness, use a stick blender to purée a portion of the mixture.
