Ham, cheese, and creamy scrambled eggs fill these croissant breakfast sandwiches, making them gooey, melty, and crunchy!
INGREDIENT
For the sandwiches:– 8 large egg– 1/4 cup milk– 1 Tablespoon butter– 1/4 cup shredded cheddar– Salt and pepper, to taste– 6 thick slices ham (or 12 thin deli slices)– 6 thick slices Swiss cheese– 6 croissantFor the sauce:– 1/4 cup mayonnaise– 2 teaspoons whole grain mustard– 2 teaspoons honey– 1/4 teaspoon onion powder– Pepper, to taste

INSTRUCTION
Preheat oven to 350. Mix eggs and milk in a medium bowl. Heating a non-stick skillet on medium-low. Melt butter and add egg mixture. Stir eggs with a spatula until curds form.

Step 1
Remove eggs from heat when curds are soft but wet. Sprinkle cheese. Mix. Salt & pepper to taste. Whisk all ingredients and put aside to make the sauce.

Place ham, cheese, and egg mixture on croissant bottoms to make sandwiches. Top sandwich with sauce.
