Corn Flour Pancakes with Strawberry Compote recipes

Ingredient

– 1½ cups corn flour – 2 teaspoons baking powder – ½ teaspoon salt – 2 tablespoons organic cane sugar – pinch of ground cinnamon – 2 egg – 1 cup unsweetened almond milk or milk of choice – 4 tablespoons coconut oil or unsalted butter if not df, melted – 1 teaspoon pure vanilla extract

In a large saucepan, combine the strawberries, lemon juice, sugar, and vanilla essence. Let the mixture simmer over medium-low heat.

 When the strawberries have reached the proper consistency, stir them periodically until they have broken down. Take the dish off the stove and let it cool down.

 If batter is too thin, add corn flour. Use more almond milk if too thick.

Heat a large nonstick skillet or griddle on medium. Repeat cooking spraying. Make a little pancake test before using the batter.

 Fill a ¼ measuring cup with batter, pour into a pan, and cook for 1-2 minutes until bubbles develop and bottom is browned. Flip and cook until bottom is gently browned.

Take out the cooked pancakes and start over with the batter.Put strawberry sauce on top of the pancakes.
