Cinnamon Walnut Banana Muffins Recipe

Banana Walnut Muffins are soft and cinnamon, like a language. They would be the best way to say "I love you."

– 1/2 cup unsalted butter, melted – 1/2 cup brown sugar – 1/2 cup white sugar – 1/2 cup sour cream – 2 egg – 1 teaspoon vanilla – 3 very ripe large banana – 1 cup all purpose flour – 1/2 cup white whole wheat flour (can sub with all purpose flour) – 1 teaspoon baking soda – 1/2 teaspoon baking powder – 1/2 teaspoon salt – 1 teaspoon cinnamon – 3/4 cup mini cinnamon chip – 1 cup chopped walnut

Start with a 400-degree oven. Prepare 2 muffin tins with non-stick spray and 14 liners. Mix butter, brown sugar, and white sugar in a large bowl until smooth.

Step 1

Mix with sour cream. Add eggs, mix. Well-mix vanilla. Add bananas to butter mixture after mashing in another bowl. Mix flours, soda, powder, salt, and cinnamon in a third bowl.

Step 2

Mix flour and banana with a wooden spoon or spatula. Mix in all but 1/4 cup cinnamon chips and walnuts. Fill muffin cups almost full with cookie scoops. Add walnuts and reserved cinnamon chips.

Step 3

Reduce muffin oven heat to 350. Bake until center toothpick is clean, 20–25 minutes. Cool 5 minutes in the muffin tray before transferring to a wire rack. Airtight container storage.
