Coffee cakes contain flour, sugar, butter, eggs, and baking powder. Cinnamon or nutmeg flavor and crumble or streusel topping are typical. It's usually served with coffee or tea at breakfast or brunch.

– ¾ cup butter– 1 cup granulated sugar– 2 large egg– 2 cups all-purpose flour– 1 teaspoon baking powder– 1 teaspoon baking soda– 1 teaspoon ground nutmeg– 1 teaspoon ground ginger– 2 teaspoons ground cinnamon– ½ teaspoon salt– 1 cup sour cream– coconut milk– ¾ cup firmly packed brown sugar– ½ cup chopped pecan– 2 teaspoons ground cinnamon

Spray or butter and flour a 9-inch spring form or 13-x-9-inch pan. Large Bundt pans can have nuts on the bottom. Mix butter and sugar on medium speed with an electric mixer. Beat each egg until blended.

Mix flour and next 4 ingredients into butter mixture alternately with sour cream, starting and ending with flour. Beat slowly after each addition to blend. Pour batter into pan.

Sprinkle batter with brown sugar, pecans, and cinnamon. Cover pan with plastic wrap and chill 8–18 hours.

Preheat oven to 350°. Ditch plastic wrap and remove cake from fridge.

Bake coffee cake 35 minutes. Lower the temperature to 325 F and bake for 20–30 minutes until a knife inserted in center comes out clean. Remove from oven. Warm or room temperature.
