Chocolate-Peanut Butter Jack-O'-Lantern Cookies Recipe

Stuffed Peanut Butter Chocolate Jack-O'-Lantern Cookies. Peanutty buttercream between milk chocolate-dipped sugar cookies. The cookies taste like peanut butter cups. These cookies have no downsides. Best of all, they're easiest to make. Ideal for Halloween and Thanksgiving. Possibly ideal for a peanut butter-filled chocolate biscuit!

– 1 stick (8 tablespoons) salted butter, at room temperature – 3/4 cup granulated sugar – 1 teaspoon pure vanilla extract – 1 egg, at room temperature – 1 1/4 cups all-purpose flour – 1/2 cup + 2 tablespoons dark chocolate cocoa powder – 1/4 teaspoon baking soda – 1/2 teaspoon kosher salt –▢12 ounces milk chocolate, melted PEANUT BUTTER FILLING – 3/4 cup creamy peanut butter – 4 tablespoons salted butter, at room temperature – 1/4 cup powdered sugar – 1 teaspoon vanilla extract – 1/4 teaspoon kosher salt – Flaky sea salt

Pre-heat oven to 350. Mix the butter, sugar, and vanilla in a large bowl for 3-5 minutes until frothy. Mix in the egg until evenly.

Beat in the flour, 1/2 cup cocoa powder, baking soda, and salt until the mixture forms a ball. If the dough is too wet to roll, add 2 tablespoons cocoa powder.

Coat your work surface with flour. Flatten each half of dough into a disc. Roll the dough 1/4 inch thick. To avoid dough sticking, use enough flour.

Cut the cookies with a pumpkin cutter or stamp. Carefully place the cookies on a parchment-lined baking sheet. Cover the baking sheet and freeze for 10 minutes until solid.

Roll out leftover scraps and repeat with remaining dough disc. Bake cookies for 10-12 minutes. After five minutes on the baking sheet, transfer to a wire cooling rack to finish cooling.

Make filling. Put peanut butter, butter, powdered sugar, and vanilla in a stand mixer. Beat until fluffy. Dip half the cookies, stem side down, into molten chocolate to coat 1/3 of the top (pictures).

Add more melted chocolate to decorate. Season with sea salt. Freeze cookies for 10 minutes. Spread peanut butter on chocolate-free cookie halves.

Gently place the top cookie, chocolate side up, onto the peanut butter. Cookies can be eaten right away or kept in an airtight container for 3 days.
