CHOCOLATE FUDGE CAKE RECIPE

Pre-heat the oven to 350°F / 180°C and grease two 8-inch round cake pans. This recipe uses a lot of liquid cake batter, so loose-bottomed pans may leak.

Sift all dry ingredients (except espresso powder) in a large bowl.  This includes flour, sugar, cocoa powder, baking powder, soda, and salt.  Mix everything with a whisk or wooden spoon to ensure proper mixing.

Mix the wet ingredients (except hot water) in a separate bowl.  This includes eggs, milk, sour cream, vegetable oil, and vanilla.  Mix them with a fork or small whisk.  Fear not if the mixture looks curdled.

After adding the wet ingredients to the flour mix, mix it all together until there are no more lumps.

Mix hot water and espresso powder in a small bowl or glass until the powder dissolves. Mix the hot coffee mixture into the cake batter.  You'll like the chocolate batter's liquidity!

Baking chocolate cake batter in prepared pans for 30-35 minutes until skewer comes out clean or with moist crumbs. For each cake pan, a kitchen scale can measure batter. I usually eyeball it.
