Chocolate Dipped Coconut Caramel Macaroons Recipe

Sharing my favourite baking recipes with you this season is very exciting. I have many nice things planned, but today's recipe is exceptional and awesome! It's amazing, and I'm thrilled to announce that I've worked with Cake In a Crate and Bob's Red Mill to produce a holiday baking package for gifts! Yes, yes! 

Ingredient

– 2 tablespoons Bob’s Red Mill Pumpkin Seed – 3/4 cup maple syrup – 1/4 cup full fat canned coconut milk – 1 tablespoon coconut oil – 2 teaspoons vanilla extract – Pinch of flaky sea salt – 3 cups Bob’s Red Mill Flaked Coconut – 1/2 cup Bob’s Red Mill Almond Flour – 5 ounces dark chocolate melted

Start with a 350-degree oven. Prepare two baking sheets with parchment. Bake pumpkin seeds on a baking sheet for 5-8 minutes until lightly toasted. Set aside.

To create caramel Mix maple syrup, coconut milk, and coconut oil in a small saucepan over medium heat. Bring the mixture to a boil and whisk continuously for 10 minutes until slightly thickened and reduced to ¾ cup.

The caramel should pour well. Add vanilla and a touch of salt after removing from heat. In a food processor, combine coconut, almond flour, and all but 1/4 cup of caramel (save 1/4 cup for topping).

Pulse until the mixture is finely minced and holds together when squeezed. On the prepared baking sheet, drop 1 tablespoon-sized balls of mixture. Pack the balls tightly; use your hands if needed.

Transfer to the oven and bake for 8-10 minutes until the macaroon tops are lightly browned. Remove from oven and cool fully.

Melt half the chocolate in a microwave-safe bowl for 30 seconds at a time, stirring after each interval. Removing from microwave, whisk with remaining chocolate until smooth.

Gently dip each macaroon bottom in melted chocolate and set on parchment-lined baking sheet. Drizzle remaining chocolate and add roasted pumpkin seeds.

Refrigerate to firm. Serve chilled or room temperature with the remaining caramel sauce once the chocolate sets. Add additional flaky sea salt if desired!
