Chocolate Covered Almond Butter Stuffed Dates Recipe

These stuffed dates are a pleasure for nut butter and chocolate lovers! Use almond, peanut, cashew, Nuttzo, and other nut butters!

– 16 medjool dates pitted* – ⅓ to ½ cup unsweetened creamy almond butter ** – ½ cup raw pecans chopped** – 1/2 cup chocolate chips – 1 tsp coconut oil – Flaky sea salt for garnish

Cut the dates lengthwise and remove the pits with a paring knife. Although pitted dates don't need to be pitted, they must be sliced open for almond butter.

Set pitted sliced dates on a small baking sheet, dish, or tray. Fill dates with 1–2 tbsp almond butter using a butter knife or small spoon.

Almond butter amounts vary on date size and how much you want put inside. No need for precision—follow your heart.

Press chopped pecans on almond butter topping. Note: cut nuts can be placed in the date cavity before adding almond butter.

Microwave chocolate chips and coconut oil in a microwave-safe bowl at 20-second intervals, stirring well, until melted, about 60 seconds.

Melt chocolate and drizzle over loaded dates. Completely cover or lightly drizzle the date in chocolate. I enjoy both ways.

Add flaky sea salt to the dates as the chocolate melts. Refrigerate the sheet pan or dish until the chocolate hardens, 30–60 minutes.
