Chocolate Chip Graham Cracker Snack Cake Recipe

S'mores fans must try this Chocolate Chip Graham Cracker Snack Cake. A fluffy marshmallow frosting tops a simple cake with graham cracker crumbs and chocolate chips. 


FOR THE CAKE: – 1 cup (100g) graham cracker crumbs (from about 8 whole crackers) – 1/4 cup (30g) all-purpose flour – 1 teaspoon baking powder – 1/4 teaspoon salt – 6 tablespoons (85g) unsalted butter, softened – 1/4 cup (50g) granulated sugar – 1 large egg – 1 large egg yolk – 1 teaspoon vanilla extract – 1/4 cup milk – 3/4 cup (127g) semisweet chocolate chip FOR THE FROSTING: – 1/2 cup (113g) unsalted butter, softened – 1/2 cup (55g) confectioners' sugar, sifted – 1/2 teaspoon vanilla extract – 1/2 cup (64g) marshmallow creme (such as Marshmallow Fluff)

MAKE THE CAKE: Preheat oven to 350°F. Prepare an 8-inch square baking pan. Mix graham cracker crumbs, flour, baking powder, and salt. Set aside.

Beat butter and sugar until fluffy with a medium-speed electric mixer. Add egg, egg yolk, and vanilla and mix well. 

Step 2

Lower mixer speed. Three portions of flour mixture and two portions of milk are added. Just combine. Mix in chocolate chips. 

Step 3

Place batter in pan and spread evenly. Bake 35–40 minutes until a pick inserted into the centre comes out clean. 

Step 4

Cool 10 minutes in the pan. Flip the cake over to cool completely on a wire rack. Serve the cake straight from the pan after it cools completely. 

Step 5

FOR FROSTING: Beat butter and sugar with an electric mixer on medium speed until combined. Combine vanilla and marshmallow creme and beat well. 

Step 6

Top cake servings with frosting. Refrigerate frosting if not using immediately.
