Chocolate Chip Cookie Nutella Ice Box Cake Recipe 

Here’s the deal. I will keep this post brief as I am travelling to The Wizarding World of Harry Potter with Asher and most of the family in less than 24 hours. How six of my nine family members got on this “sister’s only” trip is beyond me! It's cool because I like my family and rarely see them, so it's a much-needed trip. 

Ingredient

– 8 ounces mascarpone cheese – 3/4 cup Nutella – 4 cups heavy whipping cream – 1/4 cup Kahlua – 1 teaspoon instant espresso powder – 1 teaspoon vanilla – 2 dozen chocolate chip cookie – Chocolate shavings for decorating

Whip mascarpone cheese and Nutella in a stand mixer with the whisk attachment or a hand mixer until smooth.

Whip heavy cream to firm peaks. Just blend the Kahlua, espresso powder, and vanilla.

Lay 7-9 cookies in a circle on a cake stand or dish, with 2 in the centre. Spread 1 cup of Nutella cream mixture over cookies, leaving a 1/4-inch border.

Spread gently to maintain cookies in a circular. Repeat for 6-7 layers, ending with Nutella cream. If you have any cookies left, I'll devour them!

Refrigerate for at least 3 hours, ideally overnight. Garnish with chocolate shavings before serving.
