Vanilla Wafer Cake- A Classic Recipe Recipe

This delicious, rich Vanilla Wafer Cake tastes nothing like vanilla wafers! ;p Crushed cookies instead of flour make this vintage cake full of coconut and pecan flavour.

Ingredient

– 1 ½ cups chopped pecans 150g – 8 oz. sweetened coconut – 11 oz. box of vanilla wafers, crushed (311g) – 2 sticks unsalted butter, softened (226g) – 1 ½ cups sugar (300g) – 6 large eggs, room temperature – ½ cup milk (121g) – 2 teaspoons vanilla extract (8g)

Warm the oven up to 325 degrees F.  Butter and flour a tube or bundt pan.Put the chopped pecans and coconut in a medium-sized bowl and set it away

If you want to crush the vanilla wafers really small, you can use a rolling pin in a plastic bag or a food processor.

Get your mixing bowl and add the butter. Mix it in until it's smooth.Slowly add the sugar and mix for three to five minutes, or until the colour lightens and the cream puffs up.

Add the eggs one at a time and mix each one in until the yellow yolk is fully mixed in.Mix the milk, vanilla, and crushed vanilla wafers well.

Add the chopped nuts and coconut and mix well.It will be hard to spread.  Put the batter into the pan that has been made.Put it in the oven at 325 degrees for 2 hours and 10 minutes.

Use a long stick or toothpick to check after an hour.  It's done when the toothpick is clean or has a few bits on it.Let it cool for 10 to 15 minutes, then remove.

Powdered sugar can be sprinkled on the cake by spooning a small quantity into a sifter and softly striking the side. This should be done quickly before serving since powdered sugar absorbs.
