A fluffy grain-free, dairy-free, refined sugar-free banana bread! Cassava Flour Banana Bread provides a healthy snack with banana flavour and is easy to make!
– 3 large ripe bananas mashed (1.25 cups)– ¼ cup pure maple syrup– 2 large eggs– 1/3 cup avocado oil or olive oil– 2 tsp pure vanilla extract– 2 tsp apple cider vinegar or lemon juice– 2 cups cassava flour– 2 tsp baking powder– 1/2 tsp baking soda– 1/2 tsp sea salt– 1 Tbsp ground cinnamon– ⅔ cup chocolate chips optional

Pre-heat the oven to 350°F and line an 8" x 5" loaf pan with parchment. Mash bananas in a large dish until creamy.

Add eggs, pure maple syrup, avocado oil, and vanilla extract and stir well. Stir cassava flour, baking powder, baking soda, cinnamon, and sea salt in a separate dish.

Fully combine the dry and wet ingredients in the bowl.Evenly distribute chocolate chunks in batter.Evenly distribute banana bread batter in the loaf pan.

Sprinkle more chocolate chips on the dough if desired.Cover the bread pan with foil and bake for 40 minutes on the centre rack of the preheated oven to avoid a brown top.

Remove foil and bake banana bread for 10–25 more minutes until cooked through and golden brown.Let the bread cool for 30 minutes before slicing and serving.

Serve banana bread with lots of butter and honey or maple syrup. Almond or peanut butter on banana bread is also delicious!
