No dessert is more luxurious than French chocolate mousse. Possibly Baileys chocolate mousse! This Baileys Chocolate Mousse is rich, silky, chocolatey, and has a strong Baileys flavour.

Baileys Chocolate Mousse– 4 Egg White– 1 Egg Yolk– 1 cup White Sugar– ½ cup Whipping Cream– ½ cup Baileys or any Irish Cream– 1 cup Semi-sweet Chocolate chopped small– 1 tablespoon ButterWhipped Cream Topping (optional)– 1 cup Whipping Cream– 2 tablespoon Icing Sugar1 teaspoon Vanilla Extract

Make Mousse
Put chopped chocolate in a heatproof bowl.
1 cup semi-sweet chocolate Heat cream and baileys in a small saucepan on medium. Add ½ cup Baileys for a stronger taste. For a milder taste, reduce to ¼ cup and add ¼ cup whipping cream.

Stirring constantly, heat until small bubbles appear on the surface before boiling. Pour the cream/baileys mixture into the chocolate bowl after removing from heat.
Stir until smooth, combined, and glossy (my favourite part).

Add the egg yolk and small pieces of butter and whisk until melted. Return the mixture to very low heat or over a bain-marie while whisking to melt the butter and warm the egg. Allow to cool while making meringue.

Whisk egg whites until foamy.
Make a meringue by slowly adding 1-2 tablespoons of sugar to egg whites and whipping between additions. This dissolves sugar into egg whites without causing grainy meringue.

Whip until thick and glossy with stiff peaks. Set aside
One spoonful of meringue should be stirred into the chocolate mix to loosen it, then pour the whole mixture into the meringue and whip until combined.

Pour into your preferred glass/bowl/container and refrigerate for 2 hours.

To Decorate Beat cream to soft peaks.1 cup whipping cream Beat vanilla and icing sugar to stiff peaks. form Pipe cream on mousse with 1 tsp Vanilla Extract and 2 tbsp Icing Sugar.Sprinkle sprinkles, chocolate curls, or grated chocolate on cream to finish.
